    1. As mentioned before, bacteria don't "eat salt". They anaerobically metabolize carbohydrates present in the vegetables, producing lactic and acetic acid.
    2. Habanero is pronounced more like "abanero", not "habaniero". "habaniero" is a hypercorrect pronunciation, which means it is a pronunciation of a foreign word that's intended to sound more authentic, but because false analogies are used (in this case, probably jalapeño), it ends up sounding (IMO particularly) wrong.
    PS: Just look at the spelling. If habanero was supposed to be pronounced analogously to jalapeño, don't you think they would spell if "jabañero"?
